CURIOUS TO KNOW MORE about THE WINE?
THE GRAPES:
Made of a variation of 80%-100% Sangiovese grapes, (the very Tuscan grapes, the last ones to be harvested. They like to take their sweet time: totally Italian style!).
THE PRODUCER:
Connections are everything! A famous designer brand whose name we are not allowed to disclose (expensive classic Italian moccasins) produces this and other high quality wines in very small batches, for the family. Thanks to a great friend who works at the winery, we are granted privileged access to this delicious product.
THE DEAL:
The Chianti Commission will issue the official certification for this wine in late fall. In the meantime, we have put our hands on a small batch of it “as is”. What does that mean? That it’s Superior wine at an affordable price! We have decided to pass on this advantage to our guests, so the cost per bottle is still 11€
Great catch! And NO head-ache, thanks to the lowest content of sulfates in the world.

THE OLIVES:
Key to a superior oil is the correct maturity of the olives: not too green, not too ripe. That leaves out imported olives, (which are picked green to allow ripening during travel) and massive production, which entails collecting over-ripened olives after they fall.
Perfect ripeness insures all the powerful nutritional properties of the oil are intact and at their best, as in any other fruit.
No traveling! The olives are processed at the nearest mill, within 24 hours of picking.
Cold pressing, filtering to eliminate water particles that could bring to early oxidation, and storage in dark, cool place. Done!
That’s why we call it “liquid gold”.
