A specialty from Kimberly, who stayed here at the tower
1/2 cup margarine
1 cup sugar 1 cup + 2 tablespoons Brown sugar 2 cups peanut butter
1/4 teaspoon vanilla
3/4 teaspoon corn syrup (I’ve made these with out corn syrup and they turn out just fine)
4 cups uncooked dry oats
2 teaspoons baking soda
1/4 teaspoon salt
1 cup M&Ms (I use the mini M&Ms)
6 ounces chocolate chips (you could use mini chocolate chips too)
I would say this recipe makes about 60 cookies – that’s a lot, and therefore this is great for parties. I’ve made them for several parties and for my coworkers, and they are always a big hit. I hope you get a chance to try them sometime.
Mix all together. I usually melt the margarine, and add everything but the oats, chocolate chips and M&Ms. Then I slowly add in the 4 cups of oats – this will give you a workout on your arms!!! It gets hard to stir as you add the oats in. The last thing I add in are the chocolate chips and M&Ms (see pictures).
These cookies can be difficult to get to stick together – i.e., they tend to fall apart. So, I think the smaller the better. Scoop up small spoonfuls of the batter and roll into a ball in your hands, then place on the cookie sheet.
Bake at 350 degrees F (177 degrees C) for 12-15 mins. (I typically set the timer for 13 minutes).
Transfer the cookies from the baking sheet to a cooling rack or the countertop so that they don’t keep cooking after getting them out of the oven.
Let them cool and enjoy!!! Oh one more thing. They also freeze well. So if you don’t make them for a party, you can freeze them to take back out later on.
